How to make Citrus sections or segments ( Citrus Supremes)

Slice off the top and bottom of the citrus fruit down to the edible flesh. Place the fruit cut side down on the cutting surface. Using a serrated knife to cut down and around the flesh removing the rind and the white membrane next to the flesh. To remove the sections, cut towards the center of the fruit against the membrane on either side of the section. Lift out the segment and remove any seeds. Squeeze the juice out of the remaining membrane into a bowl.
