Lobster and corn Fritters
Pre-prep. Instructions:
If using whole raw lobsters, steam, cool and remove meat.
For this recipe you will need about 3- 1 ¼ lb. Lobsters.
Equipment needed:
Deep Fryer or Heavy Dutch Oven

Directions:
1. Sift dry ingredients flour to salt. 2. Combine eggs, milk, and shortening. 3. Mix wet and dry ingredients stir till smooth. 4. Fold in the corn, lobster and bell pepper and green onion. 5. Drop by tablespoon into hot deep fat (370°) and fry until golden brown, turning once about 4 to 6 minutes. 6. Drain on paper towels or brown paper bag.
