Roasted garlic mashed potatoes

Pre-prep. Instructions: Make roasted garlic.
Equipment needed: Potato ricer or potato masher

Directions:

1. Preheat oven to 325° F. Cut off the top third of the garlic head to expose
   cloves. Place a piece of aluminum foil large enough to wrap the garlic
   completely, on work surface. Put prepared garlic head on middle of foil
   drizzle with olive oil and season with salt and pepper. Bring foil up to
   the top completely wrapping the garlic. Place on small baking pan and bake
   until garlic is tender about 1 hour.
2. Allow garlic to cool till you can handle it. Squeeze pulp out from the cloves
   and mash in a small saucepan.
3. In a pot large enough to hold the potatoes and salted water to cover
   comfortably, boil till tender. Drain potatoes thoroughly, keep warm while you
   heat garlic mixture.
4. Add milk and butter to garlic in pan warm over low heat. Cover and keep warm,
   do not boil
5. Mash potatoes with a potato masher, ricer or electric mixer.(Do not use a
   food processor; it will make a gluey mess.)
6. Whip in garlic mixture until fluffy, season to taste. Serve immediately.

Notes:
      A great addition is blanched broccoli raab, add after garlic mixture.
