Parmesan Crusted Grouper
with roasted garlic mashed potatoes and tomato confit .
Pre-prep. Instructions:
preheat oven to 400° F.

Directions:
1. Season grouper fillets with salt and pepper. 2. Mix next five ingredients bread crumbs to salt and pepper in a small bowl. 3. Mix in enough of the melted butter to make a an evenly moist but not runny or greasy preparation for the crust. 4. Place the grouper fillets on a greased shallow baking pan with the skin side down. Coat each grouper fillet on the top only with the parmesan crust. Bake in the preheated oven till the crust is lightly browned and crispy. 5. Serve with roasted garlic mashed potatos and tomato confit. Notes: Refer to roasted garlic mashed potatoes and tomato confit recipes.
